Dumpling Soup

I helped Momma make dinner tonight.  I made the dumplings for chicken vegetable soup!  This is how you make them.

First I start to boil water like I am making noodles.

I put 2 duck eggs with about 3 cups flour, 1 1/2 cups water and 1 tsp salt in a big bowl.  I mixed it all together. If it is too liquidy, add a little flour at a time till it gets stiff, but add a little water at a time till it gets less stiff.  You have to play with the consistency you like.

Put the dumpling dough into the boiling water by spoonfuls.  Teaspoon size cook faster and better.  You can make them bigger or smaller depending on what you like.  You know when they are done when they float to the top, but let them cook a minute or two longer just to be sure.  Use a slotted spoon to spoon out the dumplings and put them in a big bowl.  Keep adding dough till you are done.

When the dumplings are cooked, put some butter on top and let sit a minute.  Add salt and garlic powder if you like it.  Then eat with soup.  Or just eat it plain like Grandpa likes too.
