Dumpling Soup

I helped Momma make dinner tonight.  I made the dumplings for chicken vegetable soup!  This is how you make them.

First I start to boil water like I am making noodles.

I put 2 duck eggs with about 3 cups flour, 1 1/2 cups water and 1 tsp salt in a big bowl.  I mixed it all together. If it is too liquidy, add a little flour at a time till it gets stiff, but add a little water at a time till it gets less stiff.  You have to play with the consistency you like.

Put the dumpling dough into the boiling water by spoonfuls.  Teaspoon size cook faster and better.  You can make them bigger or smaller depending on what you like.  You know when they are done when they float to the top, but let them cook a minute or two longer just to be sure.  Use a slotted spoon to spoon out the dumplings and put them in a big bowl.  Keep adding dough till you are done.

When the dumplings are cooked, put some butter on top and let sit a minute.  Add salt and garlic powder if you like it.  Then eat with soup.  Or just eat it plain like Grandpa likes too.

 

Adrian’s Party Mix

Adrian's chexmixI have been wanting to make this since Christmas.  Momma has been buying the ingredients on sale. Yesterday, I could make it finally!  I changed the different recipes we had to make my own mixture.

  • 3 cups Corn Chex
  • 3 cups Rice Chex
  • 3 cups Bugles
  • 2 cups Pretzel Sticks
  • 2 cups Rye bagel chips broken in half
  • 1 stick Butter
  • 3 Tbl coconut oil
  • 3 Tablespoons Worcestershire Sauce
  • 6 dashes Franks Red Hot Sauce (you can hardly taste it)
  • 3 cloves mashed garlic
  • 1 teaspoon Lawry’s Seasoned Salt *
  • 1/4 teaspoon Onion Powder

Put all the crunchy stuff in a big bowl.

Melt the butter and coconut oil over low heat.  Add all the seasoning.

Taste and adjust seasonings if needed.mix2

Put crunchy stuff on cookie sheet with sides and pour butter with seasonings over while stirring.

Bake at 250 degrees until mix is dry (about 1 hour and a half) Stir every so often.  Cool and store in an airtight container, if it lasts that long!

TMix1hen I tried it again and browned the butter first and added more mashed garlic. I also omitted the Rye bagel chips and added nuts.

*I made this blend and used in places of Lawry’s; 2 Tbl Salt, 1/2 tsp paprika, 1/4 tsp turmeric, 1/4 tsp onion powder, 1/4 tsp garlic powder.

Sunshine Breakfast

SmileWhen Mommy asks me to make her my extra special breakfast, this is what she wants.

All you need is an apple, some peanut butter*, raisins and a BIG smile!

*It is also goooood with almond butter.

Deviled Eggs (Or Angeled Eggs)

Today I made Deviled eggs (or Angeled Eggs because Grandma used to call them that). I have never made them before. Here is the recipe.

Serves 7

  • 7 hard boiled Eggs.Eggs
  • Mayonnaise.
  • Salt.
  • Pepper.
  •  Garlic Powder.
  • Dill.
  • Utensils  2 bowls, 1 fork, 1 knife, 2 plates and  1 spoon.
  1. Peel the Eggs. Put the shells in a bowl.
  2. Cut Eggs in half the long way on a plate.
  3. Pop yokes out and put in bowl.
  4. Mix yokes in bowl.
  5. Add Salt, Pepper, Garlic Powder and Dill to taste.
  6. Add  Mayonnaise till your liking.
  7. Spoon yoke mixture back into Eggs.
  8. Eat and enjoy!

 

Cupcakes

CupcakesWe made cupcakes the other day.  I wanted to make a special treat for Mommy camp.  I thought they were like muffins but more sugar.  I learned that they are a CAKE put into a cup! It was a good joke on me! So I learned how to make a cake and cupcakes.  Then I learned how to make a frosting.  They were yummy.

We saved a few for the big kids when they come home on Saturday. We shared with Grandma and Grandpa. And then we ate the rest 🙂

Maple Syrup

We boiled sap all last weekend. We finally finished up the syrup and we have 12.5 pints of syrup! You need about 40 gallons of sap, to make one gallon of syrup.

Momma said to be very careful by the fire.  This year I got to help light it and I got to put wood in it for the first time.  I also got to skim the sap.

We probably won’t get anymore sap because it is best to do when the nights are freezing and the days are over freezing. It is too warm for it.

I am happy with how much syrup we got, but I would have liked more. Maybe next year.

Learning to Make Dumplings

Dumpling doughI made dumplings for dinner. This recipe is passed down from my Great Grandma Bea. She taught Grandma and Momma learned it from her.  I learned it from Momma. Here is the recipe

  • 4 cups flour
  • 1 1/2 cups water
  • 2 eggs

Mix together and the dough will be gooey.  You can add more water or flour if you need to.  Mine was a little gooey, but was still good.Dumplings

Get a spoon and get about 1/4 a spoonful of dumpling stuff in it.  Drop the dough into boiling water. Wait till it goes to the top, and put in a container.  Stir occasionally.  Momma said it is okay to make a bunch of dumplings before taking them out if you want.  If you don’t cook them long enough, they will be very very gooey and gross!

Dumpling watchMomma said the BEST way to eat them is with butter, onions and garlic powder and a little salt.  We had them in tomato soup, but having them in home made chicken egg drop soup is much better!

Bird Cookies

I made some treats for the birds yesterday. I learned how to make them at Bonneyville. It was fun to make them.  The birds like cookies. When I hung the first ones up, the birds did not come for a month or so. Then the birds started to devouring it.  They ate it all in three mornings!

Now that they know the cookies are here, they are coming already. We saw three birds enjoying them this afternoon.

Bird’s Oatmeal treats

  • 1/2 cup sugar
  • 1/2 cup lard or bacon grease
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 1/2 cup wild birdseed
  • 2 eggs, including shells
  • 2 Tbl milk
  • 1 cup rolled oats

bird CookieBeat together lard and sugar; add eggs (without shells) and milk and beat well.  Add flour and baking powder, beating until well blended.  Crush egg shells into small pieces and stir in along with 3/4 cup birdseed and oats.  Form into inch balls and roll in extra birdseed.  Attach large paper clip as a hanger if desired. Bake on cookie sheet at 375 for 10-12 minutes.  Cool before hanging for birds.

Frying Eggs

I asked Momma one day how to make fried eggs. She said I could make them for breakfast! Here is how to make them!

Crack an egg into a hot frying pan with butter or coconut oil. I like the one with butter better.

I made five eggs. It is hard to crack an egg and put it into a frying pan without egg shells.

Momma said there was two ways to fry an egg. The easier way is put on a lid with some water on it. The harder one, you flip the egg. I did the easier way.

Put the cooked egg on a plate. You have to put it carefully on or else it will break. Put on pepper and Daddy likes curry powder.

Make it look pretty. Take it to the table. Eat and enjoy while hot!
